Eating soups helps increase our water intake. It would therefore be a shame not to also eat them in the summer… in a cold version, of course! “Especially since summer vegetables contain more water than winter vegetables. A tomato, for example, is composed of 95% water. It is also very rich in minerals and will therefore remain and hydrate the body for longer,” explains Krystel Gaudnik, dietician nutritionist.
Let us remember in passing that good hydration (1.5 to 2 liters of water per day) is an anti-fatigue weapon and promotes concentration. and that cold soups are easier to digest and less irritating for our body in the evening.
Gazpacho: the soup packed with antioxidants
Our Spanish neighbours, more accustomed than we are to high summer temperatures, had the brilliant idea of inventing gazpachos! The recipe for gaspachoit is a bit of an ode to colorful vegetables, a sign of their high antioxidant content. Tomatoes, for example, concentrate a powerful antioxidant from the carotenoid family called lycopene.
Peppers, on the other hand, contain good amounts of other carotenoids, such as beta-carotene, lutein and zeaxanthin. And all of these antioxidants work synergistically with each other to block free radicals and protect cells from aging.
“You should also know that the seeds of all these vegetables contain a lot of antioxidants. The good idea is therefore to keep them when you make the gaspachosince they are going to be mixed anyway,” says Krystel Gaudnik.
You can put anything in a gazpacho
Contrary to what one might believe: gazpacho is not difficult to make: Cucumber and mint gazpacho, asparagus gazpacho, zucchini and kiri gazpacho…The options are endless! The “green” version is interesting for its lightness and its richness in minerals and antioxidants that strengthen the immune system.
For a gaspacho homemade without fail, skip the salt. “Thanks to the presence of garlic and the sweetness of tomatoes, you can easily do without it. Otherwise, why not add a spice, turmeric or paprika, and that’s it!” says Krystel Gaudnik. Be careful, however, with commercial products, which are often very high in salt. Be sure to identify the least salty ones.
