15 tips for making perfect thin pancakes

To ensure that thin pancakes always turn out as intended, you need to follow a few simple but important rules.

1. Sift the flour before preparing the dough. This is necessary not only to cleanse the flour from impurities and lumps, but also to maximize its saturation with air, which makes the dough light.

2. Milk and eggs should be at room temperature. Therefore, remove the eggs from the refrigerator in advance and warm the milk a little.

3. First, mix the liquid ingredients – milk, eggs, beaten with sugar and salt. Then gradually add the sifted flour, stirring the dough thoroughly each time to avoid lumps.

4. Before frying, add a tablespoon of vegetable oil to the dough and mix well. This will make the dough more elastic and the pancakes will not stick to the pan.

5. The dough should not be too thick or too thin. The ideal dough has a consistency similar to liquid sour cream.

6. The best friend of golden pancakes is a cast iron frying pan, which heats up evenly and retains heat for a long time.

7. Grease the pan with a small amount of oil. This is important: there should be very little fat, otherwise the pancakes will be too greasy. To be on the safe side, use a silicone pastry brush. Grease the inner surface of the pan completely, but so that there are no drips.

8. The thickness and tenderness of the pancakes depend on the amount of dough poured into the pan. Find the perfect portion for your pan and always use it. Pour some batter into the center of the pan and tilt it in different directions to evenly coat the surface.

9. Fry the pancakes in a very hot frying pan. The first pancake often comes out lumpy because the pan is not yet hot enough.

10. To prevent the pancakes from drying out, turn them over as soon as the bottom side turns golden. Don’t wait for it to darken to brown.

11. Use a thin wooden spatula. Unlike metal, it will not tear thin pancakes or damage the coating of the frying pan.

12. Don’t leave pancakes unattended! With each new portion of dough, the pan becomes hotter, so the frying time decreases. If you get distracted, the pancake will immediately burn.

13. To speed up the process, fry in two pans at once. The faster you finish, the sooner your guests can enjoy fresh pancakes.
