Frozen products have a bad reputation: they are often considered “less healthy” than their fresh equivalents. Which is not necessarily true, says American dietician-nutritionist Emily Lachtrupp. Interviewed by our colleagues at Eating Well, the expert lists 5 frozen foods that are good for your health and (especially) for regulating blood sugar levels (glycemia):
Frozen broccoli
Super-quick to prepare, frozen broccoli is rich in fiber since one portion (150-200 g) contains more than 5 g. In addition, broccoli (fresh or frozen) contains sulforaphane, a molecule that helps regulate blood sugar and helps reduce insulin resistance.
Frozen spinach
Frozen spinach is a champion of dietary fiber: one portion (150-200 g) provides nearly 8 g! However, a diet rich in fiber helps regulate blood sugar, i.e. blood sugar levels.
Frozen kale
In addition to being a good source of dietary fiber (4 g for a 150-200 g portion), this green cabbage contains quercetin and kaempferol, antioxidants that are beneficial for reducing blood sugar and fighting insulin resistance.
Frozen fish
Whether it’s cod, salmon or hake, frozen fish is also interesting when you suffer from (pre-) type 2 diabetes. Indeed, these products are rich in animal proteins (between 15 and 25 g per 100 g) which slow down the digestion process and the absorption of sugars.
Frozen berries
Raspberries, blueberries, redcurrants, blackcurrants, strawberries… have a positive impact on blood sugar levels. And to enjoy them easily out of season, there’s nothing better than freezing them, which preserves their fiber and antioxidants.
