Traditional Hatay Kombe Recipe – Last Minute Gourmet News

Hatay kombeis a great snack that you can enjoy with coffee or tea. With its aromatic spices and delicious filling, you should definitely try this recipe that you can both serve to your guests and enjoy with your family.

Materials

  • 250 grams butter (room temperature)
  • 1 water glass measure of oil
  • 1 cup of yoghurt
  • 1 cup granulated sugar
  • 2 eggs
  • 1 packet of baking powder
  • 1 teaspoon of mahaleb
  • 1 teaspoon cinnamon
  • 1 teaspoon clove (powder)
  • 1 teaspoon grated nutmeg
  • 1 teaspoon allspice
  • As much flour as he gets

For internal mortar

  • 1 cup walnuts (crushed)
  • 1 cup raisins
  • 1 teaspoon cinnamon

For the above

  • 1 egg yolk
  • Sesame or black cumin

Preparation of

Preparation of the Dough:

Mix the butter and oil in a deep mixing bowl.

Add yogurt, granulated sugar and eggs and mix well.

Add the baking powder, mahaleb, cinnamon, cloves, nutmeg and allspice.

Add the flour gradually and knead until you obtain a soft dough that does not stick to the hand.

Preparation of the Internal Mortar:

Mix the crushed walnuts, raisins and cinnamon in a bowl.

Shaping the Kombe:

Take walnut-sized pieces of dough and roll them into balls in your palms.

Put some of the stuffing you prepared in the middle, close the dough and roll it.

Place on a baking tray lined with baking paper.

Preparation of the Top:

Brush egg yolk over the kombe and sprinkle with sesame or black cumin seeds.

Cooking:

Bake in a preheated oven at 180 degrees for approximately 20-25 minutes until the kobe takes on a golden brown colour.

Service:

Let the kombes that come out of the oven cool.

Serve after it has cooled.
