Ingredients:

  • For the crust:
  • 250 g of flour
  • 120 g of sugar
  • 130 g + 1 tablespoon of butter (room temperature)
  • 4 egg yolks
  • For the top layer:
  • 4 egg whites
  • 150 g of sugar
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 200 g of ground walnuts
  • 1.5 cups of jam

Preparation:

Beat the egg yolks with butter and sugar until foamy and mix in the flour. By hand or with a mixer, mix the flour with the egg mixture until it turns into a dough. Shape into a ball and leave in the fridge for 30 minutes. Heat the oven to 180 °C. Line a medium-sized baking sheet with parchment paper. Grind the walnuts. Beat the egg whites with a pinch of salt until they become foamy. Gradually add sugar and vanilla, beating until stiff peaks form. Carefully stir in the ground walnuts. Roll out the dough and press it into the prepared pan. Spread apricot jam over the crust, and spread the walnut mixture over the jam. Bake the cake for 20-25 minutes, until the top layer is baked and golden brown. If the top starts to darken too much, lower the oven temperature. Allow to cool before cutting. (table)
