English breakfast – warm salad

The British rarely use spices and sauces. Dishes made from fish, vegetables and fried meat are very popular. The breakfast ritual itself is leisurely and aristocratic. Add a little English tranquility to your kitchen.

Ingredients:

– a mixture of different lettuce leaves

– 8 tbsp. l. extra virgin olive oil

– 3 tbsp. l. white wine vinegar

– 1 tsp. English mustard

– 4 slices fried meat

– a few slices of stale bread

– 2 eggs

– 4 boiled potatoes

– cheese “Ķiplociņš” (with garlic)

– salt

– freshly ground black pepper

Preparation (25 minutes, 2 servings):

1. Wash, dry and tear lettuce leaves in a large bowl.

2. Prepare the dressing: Whisk the olive oil, white wine vinegar and mustard in a bowl. Add salt and black pepper to taste. Pour water into a small saucepan and bring to a boil so you can poach the eggs.

3. Spray the pan with a little oil. When the oil is hot, fry the boiled potato wedges and slices of fried meat in it. Add pieces of stale bread. When the potatoes and meat are cooked and the bread is crispy, remove from heat.

4. Carefully crack the eggs into a saucepan of boiling water. Cook them for about 2 minutes. Add hot pieces of meat, toasted bread and potatoes to your salad. Mix everything quickly and season with spices.

5. Place the salad on plates. Using a slotted spoon, remove the poached eggs (the yolk should be runny). Place the eggs on top of the salad and carefully pierce them so that the yolk flows a little onto the salad. Sprinkle with vinegar and sprinkle with Ķiplociņš cheese.

6. Serve while the salad is warm.
