Nils Molinder restaurants – which are they?

Together with his brother Eric Molinder Nils Molinder runs many restaurants in the Stockholm area, including Melander’s Fish, Sjöpaviljongen, Wärdshuset Ulla Winbladh, Art Bakery, Nostrano and Wedholm’s Fish.

Nils has had an interest in fish and shellfish since childhood. When he was 13, he was a pre-school student in Östermalmshallen, where he showed his forefoot and got extra work on weekends and holidays.

– It was a fantastic job. Östermalmshallen was then, perhaps more than today, a gastronomic stronghold with lots of fresh ingredients. I started by scrubbing crabs and cleaning fish. After a while, I had to start serving over the counter. In those days, you worked much more with the knife, with the whole fish. It was a challenge and a very good school, Nils Molinder has previously told in an interview with Hotel & Restaurant.

As an 18-year-old, he studied a two-year journeyman’s degree at the Grand Hotel. He then received a journeyman’s letter and became a chef.

Nils Molinder Michelin star – why was it removed?

A restaurant that Nils Molinder holds extra close to his heart is Wedholm’s fish. It is located in central Stockholm and is one of Sweden’s first restaurants to receive a Michelin star.

– It is the crowning glory, with the very finest ingredients. We’ve had it since 1997, and to this day many of the dishes on the menu are the same as when we opened, Nils Molinder previously told Better.

But Wedholm’s fish no longer has a Michelin star.

The restaurant received the award before Nils Molinder took over the restaurant, and was allowed to keep the star for five years before it was removed.

Nils Molinder has previously told Hotell & Restaurang why he thinks Guide Michelin chose to remove the star.

– The star is actually personal, but I had been with it for five years, so I inherited it – for a time. Then it was removed, they probably weren’t too happy that we opened so many places, Nils explained and continued:

– We don’t have a star, but things are going better than ever, it’s actually almost a freedom to avoid the pressure that a star can give.

Nils Molinder is in this year’s season of TV4’s long-running Kokarnas kamp All star. There he competes against the chefs Thomas Sjögren, Louise Johansson, Håkan Thörnström, Jonas Lagerström, Tea Malmegård, David Enmark, Jessie Sommarström, Erik Videgård and Desirée Jaks as well as the challengers Tommy Myllymäki, Tareq Taylor and Daniel Couet.

Nils Molinder has also been in another season of Kokkarna kamp, ​​namely the fourth season which was broadcast in 2015. Then Nils came to the final where he was pitted against Peter J Skogström and finally finished in second place.
