  • a Greek yogurt (adjust the proportions according to the use and the number of people)
  • a small clove of garlic

  • a tablespoon of organic olive oil
  • a little salt and pepper to taste

First, mix all the ingredients with a little water. Add water and mix until you get an ideal consistency depending on the use of the sauce. It will be used liquid for a salad, but thick to accompany a meat or imitation meat for example.

  • 2 ripe avocados
  • 1 chili pepper (preferably a serrano)
  • half a red onion
  • a lime juice
  • a tablespoon of cold-pressed organic olive oil
  • a pinch of sea salt
  • half a glass of coriander leaves

You can add tomato, but it is optional in the recipe.

Preparing guacamole with fresh coriander

The preparation is very quick:

Start by peeling the onion and cutting the necessary amount into small cubes. If you want to add tomato, do the same.

Then slice the chilli pepper. Chop the coriander. Cut the avocados into more or less coarse cubes. Mix the chilli pepper, onion, chilli pepper, coriander, tomato if you use any and the lime juice. Add salt and mix well.

Then gently add the avocados and mix without crushing them completely. Check the seasoning and adjust if necessary.
Finally add the olive oil and mix before serving.

Phở recipe, an easy-to-adapt Vietnamese soup

Many vietnamese recipes can be easily modified depending on what you have in your fridge and cupboards. This is the case with the bun (the best known is the bo bun recipe) and this is also the case with pho.

Pho can be vegetarian

While the broth is traditionally prepared with bones and meat, you can adapt the recipe by using vegetable broth as many vegetarians do in Vietnam. It is best to make your own broth. Each family has its own recipe so don’t be afraid to experiment a little.

You can find specific broths for pho in Asian grocery stores, to use if you really don’t have time, but check if they are vegetarian if this is an important criterion for you.

Prepare the vegetable broth

If you have the time, the pho will be really better with a homemade broth. Otherwise, mix the ingredients into a ready-made broth.

The ingredients of the recipe

Pho isn’t quick to make, but it doesn’t necessarily require a lot of work if you’re used to it.

For the broth

  • Dried black mushrooms (type Enokiand if you can some shiitake)
  • Radishes depending on the season (count half a white radish, for example)
  • A small piece of ginger (wash it, but don’t peel it)
  • 4 onions
  • Other vegetables, for example canned baby corn (in Asian grocery stores)
  • 4 tablespoons soy sauce
  • A big pinch of salt
  • A large pinch of black pepper (e.g. Sichuan black pepper)
  • You can add a little sugar if you wish (during cooking according to taste).
  • Spices: You can buy a 5-spice mix at an Asian grocery store that can do the trick and add cardamom, or mix: 10 cloves, a cinnamon stick, a tablespoon of coriander, a tablespoon of fennel seeds, a black cardamom (or cardamom powder), and 5 star anise.

For the accompaniment

  • 1 pack of rice noodlespreferably special pho (they are long and wide)
  • soybean sprouts (mung bean)
  • red pepper, according to your taste
  • a lime (or half a lime per person according to your taste)
  • of fresh thai basil
  • fresh coriander
  • a little rice vinegar (or white vinegar), and a pinch of sugar

You can add tofu if you like, pho is an easy way to cook tofu.

Preparing pho

Peel the radish and cut it into large cubes.

Roast the spices and ginger. Add the onions and leave on medium heat for a few minutes, stirring regularly.

Place the spices in a tea ball, or a resealable tea bag. In a pot, add at least 4 liters of water, your vegetables (mushrooms, onions and other vegetables of your choice) and the tea ball. Heat over high heat until boiling. Reduce the heat. Add the soy sauce, salt and pepper.

Laissez simmer the broth for 2 hours checking from time to time.

Prepare the side dishes

At the end of cooking the broth, you can prepare the accompaniments.

In a small ramekin, first pour a little rice vinegar and a pinch of sugar. Mix and add some of the mung beans. Let them marinate for about fifteen minutes.

Then cook the rice noodles following the instructions on the packet, preferably keep them al dente first. Once cooked, place them in a colander and rinse them with cold water to stop the cooking. Drain and set aside.

Cut the lime and Chop the fresh herbs.

Serve Vietnamese soup

When the broth is ready, place the rice pasta in a saucepan and pour a little broth over it so that the flavor soaks in.

Finally, serve the pho in large bowls: first place the vegetables, the soybeans if you use them and cover with broth. Then add the other ingredients.

Use fresh coriander in salads

Simply add fresh coriander to your salads

Mint is often added to summer salads, but fresh coriander brings a much more delicate flavor. Here is an example of a salad:

  • green salad such as lamb’s lettuce or rocket
  • fresh coriander
  • grapes of your choice
  • blue cheese cubes

This salad can be served plain, but it will be even better with a lime or orange vinaigrette.

First, you have to marinate the meat for a while, but the preparation time is quite short.

For the marinade (to be prepared the day before or several hours before)

  • coarsely ground pork or beef (you can use imitation meat), quantity according to your taste (around 200 g)
  • 2 cloves garlic
  • a pepper
  • a green pepper
  • half a bunch of coriander
  • a pinch of salt
  • a pinch of pepper
  • a lime juice
  • 2 tablespoons olive oil

Other ingredients

  • tacos or small tortillas (2 per person) (you can fry the tortillas)
  • a few diced tomatoes or other vegetables of your choice
  • diced rather ripe avocados
  • 100 g grated cheese

Preparing homemade tacos

For the marinade, prepare the ingredients and crush them (except the meat). Then add the meat and mix well. Leave to rest in a cool place for a few hours.

Brown the meat in a frying pan with a little olive oil.

Then place on each taco: meat, vegetables and herbs, then cheese.

You can serve the tacos with sour cream and lime.

Coriander pairs well with Thai or Indian food. Example with this vegetarian red curry.

  • 500 g red beans
  • a clove of garlic
  • a large onion or 2 shallots
  • half a bunch of coriander
  • a tablespoon of masala spices
  • 3 tablespoons olive oil
  • a pinch of salt
  • a pinch of pepper

How to make red bean and coriander curry recipe

If the red beans are canned, they are ready to use and you just need to rinse them. If they are dry, however, you will need to soak the day before.

Peel and chop the onions and garlic. In a saucepan, heat the olive oil and brown them.

Add the spices and coriander. Reserve some fresh coriander to accompany the dish. Add a liter of water and bring to the boil.

At this point, add the drained red beans and lower the heat. cook over low heat until the mixture is somewhat thick, usually at least an hour. Monitor and stir regularly. Add salt and pepper at the end of cooking.

For example, you can serve the curry with rice. Add a little fresh coriander to each serving.
