Homemade chocolate ice cream, an easy recipe

When it gets warmer, we willingly abandon the chocolate tart for this quick homemade ice cream to prepare. Depending on your tastes, prefer dark chocolate ice cream or milk chocolate ice cream, the proportions do not vary.

Ingredients for half a liter of chocolate ice cream

  • 200 g of organic dark baking chocolate or organic pastry chef milk
  • 110 g caster sugar
  • 75 g icing sugar
  • 50 cl of thick crème fraîche
  • 3 eggs
  • 4 tablespoons unsweetened cocoa powder
  • To accompany if you wish: pieces of fruit, hazelnuts, walnuts, grated coconut

Preparation

If you can, place a cold-proof container in the freezer ahead of time.

  • First, separate the egg yolks from the whites and set the whites aside for now.
  • In a salad bowl, mix the egg yolks with the powdered sugar.
  • Then add the cream and mix.
  • In a small saucepan, melt the chocolat in a bain-marie before adding it to the preparation.
  • In a separate bowl, beat the egg whites until stiff. very firm. Add the icing sugar and beat everything together.
  • Carefully add this preparation to the first.
  • Then take your container out of the freezer and pour the mixture into it. Leave to cool for 4 hours in the freezer before tasting.

Even more delicious: salted caramel chocolate ice cream

Ingredients for 4 to 6 people

  • 200 g dark chocolate
  • 400 ml of whole liquid cream
  • 1 can of sweetened condensed milk (397 g)
  • 50 g caster sugar
  • 50 g butter
  • 100 g sugar for caramel
  • 2 tablespoons of water
  • 1 pinch of salt

Preparation

  • In a saucepan, melt the chocolate with 200 ml of liquid cream until you obtain a smooth ganache.
  • In another saucepan, prepare the caramel by heating the sugar and water until it turns an amber color, then add the butter and a pinch of salt, and let cool.
  • In a bowl, beat the remaining liquid cream into whipped cream and gently fold it into the chocolate mixture. Then add the sweetened condensed milk and mix well.
  • Pour a layer of this mixture into a container, add caramel marbling, then cover with the rest of the ice cream and marbling again with caramel.
  • Place in the freezer for at least 4 hours before serving.

We follow the same principle with the following ingredients:

  • 110 g of brown sugar
  • 40 cl of coconut milk
  • 10 cl of vegetable cream
  • 3 tbsp. of fairly neutral vegetable oil (e.g. rapeseed oil)
