Cornish cucumbers – 500 gr.

1. Preparation of products

Start with the chillies – wash them well and dry them with a kitchen towel. To preserve their crunch and flavor, grill them lightly on a pan, grill or stove, without frying them. They just need to be lightly charred for extra flavor. After roasting, make a slit along the length of each pepper so they can better absorb the marinade.

Gherkins are washed and cleaned well. Cut them in half first and then once more lengthwise to make quarters. This will allow them to absorb the marinade faster and more evenly. If you use old garlic, leave the cloves whole, if they are fresh, chop finely.

2. Preparing the marinade

In a large saucepan, combine the two types of vinegar – wine and balsamic, along with the sugar, oil and salt. Mix well until the sugar and salt are completely dissolved. Add finely chopped parsley and garlic to the marinade to add freshness and extra flavor.
