Our easy recipe for zucchini bread with basil

This is a great way to get kids to eat vegetables or to use up the zucchini that is proliferating in the garden. This zucchini and basil “bread” is perfect as a starter or appetizer. A sure bet!

A very simple recipe to make with ingredients that are sure to be found at home at the end of summer. Halfway between bread and flan, our zucchini and basil “bread” will delight the whole family and we bet you will know the recipe by heart quickly!

The ingredients of the recipe

  • 3 courgettes
  • 25 cl of fresh cream
  • 4 eggs
  • 35 g breadcrumbs (3 or 4 crushed rusks)
  • 2 cloves garlic
  • basil
  • salt and pepper

Preparation of the recipe for zucchini bread with basil

Wash and chop the basil leaves, set aside. Wash and peel the zucchini if ​​their skin is too thick, otherwise you can leave it. Cut them into cubes and brown them in olive oil with chopped garlic, salt and pepper for 20 minutes. Add the basil at the end of cooking.

Beat the eggs into an omelette, then add the crème fraîche and breadcrumbs.

Mix the eggs and zucchini. Pour into a previously greased cake tin and bake for 30 minutes at 200°C.

Let cool and refrigerate for a few hours: the fresher the zucchini bread, the better! Enjoy in small cubes to dip in various sauces as an aperitif or cut into slices with a green salad… Enjoy!
