Ingredients:
- 300 g of flour
- 100 g of corn flour
- 1 baking powder
- 1/2 teaspoon of baking soda
- 150 g of salty cheese, crumbled
- 2 roasted and peeled peppers, cut into cubes
- 3 spoons of ajvar
- 2 eggs
- 100 ml of oil
- a handful of pitted black and green olives
- 300 ml of yogurt
- 1 teaspoon of dry spice mix
- 1 teaspoon of salt
Preparation:
For these muffins, first mix all the dry ingredients. In a separate bowl, beat eggs, yogurt and oil with a mixer, then add chopped pepper, ajvar, crumbled cheese and chopped olives. Add the wet ingredients to the bowl with the dry ingredients and mix everything by hand.
Prepare the muffin tin in advance by inserting paper baskets. Spread the mixture in the mold. Heat the oven to 180 degrees and bake for about 20 minutes.
Take them out of the oven and let them cool, then enjoy.
