Raclette is the essential winter dish! If it should be consumed in moderation, there are ways to lighten it. You just have to choose the right cheeses. Raphaƫlle Gruman, nutritionist, helps us choose the least fatty ones.
How many raclettes can you allow yourself each month in winter?
Rich in calcium, raclette cheese is not all bad… as long as you consume it in moderation. It is a pressed cheese which makes it a food particularly rich in lipids. It contains on average 45% fat, which promotes cholesterol and, in the long term, cardiovascular disease. No reason to ban raclette though. It is often synonymous with conviviality and happy family moments. However, it is better not to overdo it every winter!
“Ideally, you should not consume more than two per month. Indeed, excess cheese and cold meats increase hypertension due to the salt content. For hypertensive patients or those suffering from hypercholesterolemia, it should be limited to once a month“, explains RaphaĆ«l Gruman.
Goat’s or sheep’s milk cheeses are generally less fatty
As for the choice of cheese, it can also change the situation. If you want a less fatty raclette cheese, simply choose cut farmer’s cheese. It will be more interesting from a nutritional point of view, easier to digest and above all, it will be less fatty than industrial raclette cheeses, which are ultra-processed foods.
In the supermarket, there is no better reference than others, says our expert. “Raclette cheeses are generally fatty, but if you choose goat’s or sheep’s milk cheeses, they will be slightly less fatty. But it’s the quantity that will make the difference“. In other words, just because you top your raclette with goat’s milk cheese, that doesn’t mean you can eat it as much as you want.
In cheese, the more water you have, the less fat it is. Goat cheese is very fresh, therefore rich in water. It will therefore be less fatty than other cheeses.
No matter what cheese you’re going to use, the trick to eating less is to cut the slice in half. You won’t consume more pans, but you will consume less cheese.
