Ingredients:

  • 6 egg whites
  • 6 spoons of sugar
  • 1 vanilla sugar
  • 6 tablespoons of flour
  • half a bag of baking powder

  • 6 egg whites
  • 12 spoons of sugar
  • 1 vanilla sugar
  • 150 ml of water
  • juice of 1 lemon

Preparation:

Heat the oven to 180 degrees. In a bowl, beat the egg whites until stiff, gradually adding sugar. Add flour mixed with baking powder. Pour the mixture into a tray lined with baking paper. Bake for about 20 minutes, in an oven heated to 180 degrees, until the mixture turns golden yellow. Remove from the oven and let cool. Beat the egg whites into stiff peaks. Boil water with sugar in a saucepan until you get a thick syrup. Slowly add the hot syrup to the beaten egg whites, whisking constantly. Pour lemon juice and beat until you get a thick and shiny mixture. Spread the filling over the cooled crust. Then level the surface and let the champita cool completely and harden. Sprinkle the champita with powdered sugar and cut. Finally, sprinkle with grated chocolate.
