To enjoy crunchy and flavorful cucumbers in the winter, the pickled cucumbers recipe is perfect and easy to follow. Here is a brief description of the main steps to prepare these pickles, without the use of preservatives and without the need for airing.
Ingredients for Pickles That Never Go Soft
- 3 kg of fresh cucumbers
- 2 liters of water
- 2 tablespoons salt for pickles
- Cherry twigs
- Dried dill sticks
- 2-3 cloves of garlic
- 2 horseradish roots
- 1 hot pepper
- 2-3 stalks of celery
Method of Preparation
1. Preparation of Cucumbers:
Choose cucumbersi the freshest, without a flower at the tip and which are firm to the touch.
Wash them well and cut off the ends to keep the crunch. This is an essential step to get firm cucumbers.
2. Preparation of the Brine
Boil 2 liters of water with 2 tablespoons of salt until the mixture reaches boiling point.
Allow the brine to cool slightly after turning off the heat.
3. Scalding the Cucumbers
Place the cucumbers in a large pot and cover them completely with the hot brine. Let them sit covered like this until the next day.
4. Wrapping the Cucumbers
Prepare the pickle jars or cans: At the bottom of each container, put a few stalks of celery and sprigs of sour cherry.
Place the cucumbers as close together as possible in the jars to maximize space.
5. Completion of Pickling
Boil the brine again, letting it boil for a few minutes until it becomes cloudy and slightly greenish.
Add to the jars: hot pepper, peeled and chopped garlic, and horseradish for extra flavor.
